Tender, juicy chicken spiced t? perfecti?n and t?ssed with fluffy quin?a, fresh veggies, warm naan and a creamy tahini sauce f?r a delici?us dairy-free dish that�s sure t? w?w y?ur tastebuds!

These b?wls have shawarma-seas?ned chicken (paprika, cayenne, turmeric, and cumin, plus lem?n juice and ?live ?il), quin?a, and a fresh Mediteranean-style veggie salad. And then y?u can g? nuts with t?ppings- av?cad? slices, tzatziki sauce, and hummus are great ?pti?ns (we used all ?f them!).

INGREDIENTS

  • 1 cup dry quin?a
  • 1.5 cups water
  • 2 chicken breasts b?neless/skinless
  • 1 cl?ve garlic smashed and minced
  • 2 TBSP extra virgin ?live ?il divided
  • juice ?f 1/2 a lem?n
  • 1 teasp??n gr?und cumin
  • 1/2 teasp??n sm?ked paprika
  • 1/4 teasp??n gr?und turmeric
  • 1/8 teasp??n cayenne pepper
  • 2 naan flatbreads t?asted ?r warmed slightly

THE VEGGIES:

  • 1/4 small red ?ni?n
  • 1/2-3/4 bell pepper red ?r green
  • 1/2 English cucumber
  • 1 cup grape t?mat?es
  • juice ?f 1 lem?n
  • 2 TBSP ?live ?il
  • 1-2 TBSP fresh ch?pped parsley

TAHINI SAUCE:

  • 1/4 cup tahini
  • 1 cl?ve garlic smashed and minced
  • juice ?f 1/2 a lem?n
  • 3 TBSP warm water
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp paprika


INSTRUCTIONS

  1. First rinse and drain y?ur quin?a using a mesh strainer ?r sieve. Bring a medium saucepan t? medium heat and lightly t?ast the quin?a t? rem?ve any excess water. Stir as it t?asts f?r just a few minutes. This step is ?pti?nal but really adds t? the nuttiness and fluff fact?r ?f the quin?a! Next add y?ur water, set burner t? high, and bring t? a b?il. Once b?iling, reduce heat t? l?w and simmer, c?vered with the lid slightly ajar, f?r 12-13 minutes ?r until quin?a is fluffy and the liquid has been abs?rbed.
  2. While the quin?a c??ks, prep y?ur veggies! Ch?p ?ni?n, bell pepper, cucumber, and parsley. Mince y?ur garlic and slice grape t?mat?es in half.
  3. Pat chicken dry with paper t?wel, then place a dry paper t?wel ?n t?p. Using a meat mallet ?r heavy pan, p?und t? 1/4-inch thickness.
  4. In a large shall?w b?wl ?r resealable plastic bag, c?mbine cumin, paprika, turmeric, and cayenne pepper with juice ?f 1/2 lem?n, minced garlic, and 1 TBSP ?live ?il. Add chicken and c?at with the spices. Set aside t? marinate at r??m temperature f?r at least 10 minutes.
  5. Snag y?ur n?w-fluffy quin?a fr?m the p?t and give it a little fluff with a f?rk. Seas?n with salt and pepper, t? taste. Set aside.
  6. Rem?ve chicken fr?m marinade and seas?n b?th sides with 1/2 tsp salt and black pepper as desired. Heat 1 tablesp??n ?live ?il in pan fr?m naan ?ver medium heat. When ?il is shimmering, add chicken. C??k until chicken is c??ked thr?ugh (165 degrees F), appr?x 3-4 minutes per side. Transfer chicken t? a plate and all?w t? rest while y?u prep y?ur quin?a b?wls.
  7. C?mbine ?ni?n, bell pepper, cucumber, t?mat?es, and parsley in a b?wl and dress with juice ?f ?ne lem?n and 2 TBSP ?live ?il. Seas?n if desired.F?r the tahini sauce, whisk t?gether tahini, lem?n juice, and minced garlic. Sl?wly add warm water, whisking well until thin and saucy. Seas?n with salt, pepper, and paprika.
  8. Slice y?ur chicken int? thin strips ?r ch?p int? bite-sized pieces.
  9. N?w let's t?ss it all t?gether! Y?u can plate the veggies and chicken ?n t?p as pictured ab?ve ?r t?ss the quin?a with the veggies first f?r g??dness in every bite! Dress with tahini sauce and dig in!


NOTES

  1. Prefer t? skip the heat? Nix the cayenne pepper f?r a mild dish. Craving spice? Kick up the heat as much as y?u'd like. Anything g?es with this delish dish!
