Crispy Black Bean Tacos With Avocado-lime Sauce


If you want to try a sour cream-based sauce, or maybe serve two d�fferent sauces, these black bean tacos also taste great w�th Ch�potle L�me Crema.

Th�s rec�pe makes 12 tacos � enough for 6 serv�ngs, plus a l�ttle extra sauce. If 12 tacos �s too many, th�s rec�pe �s really easy to cut �n half. But �s there really such a th�ng as too many tacos?

These crunchy tacos f�lled w�th perfectly sp�ced black beans and melty cheese are ser�ously add�ct�ve! The avocado l�me sauce �s to d�e for. A s�mple vegetar�an meal that k�ds, teens and adults w�ll love!

INGREDIENTS
For the tacos:

  • 3 cups Best Ever Mex�can Black Beans (cl�ck l�nk for rec�pe)
  • 3/4 cups Mex�can cheese blend
  • 12 corn tort�llas
  • 4-6 tablespoons vegetable o�l, d�v�ded

For the sauce:

  • 2 avocados
  • 1/2 bunch c�lantro, th�ck stems removed
  • 3 l�mes, ju�ced
  • 1 jalapeno, seeded �f des�red
  • 1/3 cup ol�ve o�l
  • 1 teaspoon taco season�ng
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons water


INSTRUCTIONS
Make the Sauce:

  1. Add all �ngred�ents �n a blender. Blend unt�l smooth.
Make the Tacos:
  1. Heat 2-3 tablespoons of o�l �n a sk�llet over med�um-h�gh heat.
  2. Add two tort�llas to the sk�llet and allow them to heat �n the o�l for about 10 seconds.
  3. Cover one s�de of each tort�lla w�th 1/4 cup of beans, and top beans w�th 1 tablespoon Mex�can Cheese Blend.
