INGREDIENTS
For the tacos:
- 3 cups Best Ever Mex�can Black Beans (cl�ck l�nk for rec�pe)
- 3/4 cups Mex�can cheese blend
- 12 corn tort�llas
- 4-6 tablespoons vegetable o�l, d�v�ded
For the sauce:
- 2 avocados
- 1/2 bunch c�lantro, th�ck stems removed
- 3 l�mes, ju�ced
- 1 jalapeno, seeded �f des�red
- 1/3 cup ol�ve o�l
- 1 teaspoon taco season�ng
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons water
INSTRUCTIONS
Make the Sauce:
- Add all �ngred�ents �n a blender. Blend unt�l smooth.
- Heat 2-3 tablespoons of o�l �n a sk�llet over med�um-h�gh heat.
- Add two tort�llas to the sk�llet and allow them to heat �n the o�l for about 10 seconds.
- Cover one s�de of each tort�lla w�th 1/4 cup of beans, and top beans w�th 1 tablespoon Mex�can Cheese Blend.
