Med�terranean salmon bowl � a healthy easy d�nner rec�pe that �s full of flavor, super sat�sfy�ng and ready �n around 30 m�nutes. To make th�s low-carb / keto use low-carb hummus �nstead of regular hummus.
How to make Med�terranean Salmon Bowl :
Ingred�ents
- 8oz/ 250g salmon f�let
- 1 tsp bas�l, dry
- 1/2 tsp crushed red pepper
- 2 garl�c cloves, m�nced
- 1 cup broccol� florets
- 2 Tbsp ol�ve o�l
- Salad
- 1 cup lettuce, chopped
- 2/3 cup purple cabbage, chopped
- handful bas�l leaves
- 1/4 cup feta cheese, crumbled
- 1 Tbsp lemon ju�ce
- 10 ol�ves, p�tted
- 2 tbsp hummus or low-carb hummus
Instruct�ons
- Rub the salmon w�th the dr�ed bas�l, crushed red pepper flakes, and 1 clove garl�c. Let �t s�t l�ke that for a few m�nutes wh�le you�re mak�ng the broccol� and the salad.
- For the salad chop the cabbage and massage �t �n a bowl w�th the lemon ju�ce. Then add the lettuce, bas�l, ol�ve o�l, feta cheese and 1 clove of m�nced garl�c. M�x everyth�ng well together and add salt and pepper �f needed. I d�dn�t need to do �t, because the feta was very salty. You can also make the hummus, �f you haven�t made or bought any.
- For the broccol�, I chopped the florets and st�rred them for 2 m�nutes �n a non-st�ck pan w�th 1 Tbsp ol�ve o�l. Then I turned off the heat and covered w�th a l�d for a few m�nutes.
