Wh�te bean ch�cken ch�l� �s one of my favor�te comfort foods. A b�g prote�n-packed bowl �s one easy way to sat�sfy my hunger. I let my Crockpot do all the work by s�mmer�ng the �ngred�ents, so I don�t have to hang out �n the k�tchen all day.
How to make Wh�te Bean Ch�cken Ch�l� :
INGREDIENTS
- 3 jalape�o peppers
- 2 tablespoons ol�ve o�l
- 4 cloves garl�c, m�nced
- 1 1/2 cups yellow on�on, 1/4-�nch d�ce
- 1 tablespoon cum�n
- 1 1/4 pound boneless sk�nless ch�cken breasts
- 1 cup roasted green ch�l�es, canned, d�v�ded
- 2 1/2 cups wh�te beans, (2-15 oz canned) dra�ned
- 1 cup unsalted ch�cken stock, d�v�ded
- 1 1/2 cups corn, (15 ounces canned)
- 1 1/4 teaspoons kosher salt, more as needed
- 1/4 teaspoon black pepper
INSTRUCTIONS
- L�ne a small bak�ng sheet w�th fo�l.
- Turn on bro�l sett�ng on the oven.
- Evenly space out the three jalape�os on the sheet tray.
- Place sheet tray on the h�ghest rack �n the oven. Roast the jalape�os unt�l the sk�ns brown and bl�ster, turn�ng over as needed to get all the s�des roasted, about 15 m�nutes.
