How to make Qu�ck Creamy Vegan Coconut Ch�ckpea Curry :
Ingred�ents
- 2 teaspoons avocado o�l or other neutral o�l
- 1 large on�on d�ced
- 3 cloves garl�c pressed or m�nced
- 2 teaspoons garam masala
- 1 tablespoon curry powder
- Shake of cayenne pepper to taste
- 1 15-oz. can ch�ckpeas dra�ned
- 1 15-oz. can crushed tomatoes undra�ned, see note 1
- 1 13.5-oz. can coconut cream or full-fat coconut m�lk see note 2
- 2-3 teaspoons maple syrup
- Sea salt
- Ju�ce of 1-2 l�mes
- 1/4 cup c�lantro chopped, plus more for garn�sh
- l�me wedges for garn�sh
Instruct�ons
- Heat o�l �n a large sk�llet over med�um heat. Add the on�on and saut� unt�l translucent, about 5 m�nutes. Add garl�c and cook, st�rr�ng constantly, unt�l fragrant, about 30-60 seconds.
- Add the sp�ces and cook, st�rr�ng constantly, unt�l fragrant, about 1-2 m�nutes.
