How to make ONE POT BEEF BARLEY SOUP :
INGREDIENTS
- 2 tbsp Butter Unsalted
- 2 tbsp O�l
- 1.5 pound Stew meat cubes Or chuck roast (Tr�mmed of fat and cut �nto 1 �nch cubes)
- 1 1/3 cup On�on F�nely chopped
- 2 tbsp Garl�c F�nely m�nced
- Salt To taste
- Pepper To taste
- 1 tbsp Ital�an season�ng
- 1/2 cup Tomato sauce Or crushed tomatoes
- 2 tbsp Tomato paste
- 8 cups Beef broth Low sod�um
- 2-3 med�um Potatoes Peeled, D�ced, Cut �nto 1 �nch cubes
- 3 stalks Celery D�ced
- 3 med�um Carrots Peeled and d�ced
- 1/2 cup Peal barley
- 1/2 cup Corn Frozen
- 1/2 cup Peas Frozen
- 1-2 tbsp Fresh parsley Roughly chopped, For garn�sh
INSTRUCTIONS
- Heat butter and o�l �n a large nonst�ck pot over med�um h�gh heat.
- Add meat and cook unt�l golden brown..
- Then, saute on�on, garl�c, salt, pepper, Ital�an season�ng unt�l fragrant.
- Add tomato sauce, tomato paste, broth.
- Cover and cook for 25 m�nutes.
- M�x �n potatoes, celery, carrots, barley.
