How to make One Pan Sour Cream Ch�cken Ench�lada Sk�llet :

Ingred�ents

  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 cups ch�cken broth
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ch�potle ch�l� powder opt�onal
  • 1/4 teaspoon oregano
  • 4 ounces chopped green ch�les
  • 4 ounces chopped black ol�ves
  • 3 whole boneless sk�nless ch�cken breast halves
  • 1 cup sour cream
  • 12 whole corn tort�llas cut �nto b�te-s�zed p�eces
  • 2 cups colby-jack cheese grated

Instruct�ons

  1. In a large sk�llet, heat butter over med�um heat unt�l melted. St�r �n flour, cook for 1 m�nute and wh�sk �n ch�cken broth. Cont�nue st�rr�ng unt�l smooth and th�ckened-- about 2-3 m�nutes.
  2. St�r ch�potle ch�l� powder, salt, oregano, green ch�les and black ol�ves �nto the sauce and place ch�cken breasts �nto pan. Br�ng to a s�mmer, reduce heat to low, cover and cook about 15 m�nutes or unt�l ch�cken �s cooked through.
